So, last week I had a ton of food in the fridge and I was feeling a little creative. I knew not what to make, but I knew it was going to have to be something very unique, given the weird combination of ingredients. I dabbled through some cookbooks and online recipes until I looked myself straight in the face and said, “Maddie. This one is up to you.”
I couldn’t even begin to explain a recipe with measurements and time and all of that necessary recipe stuff, because I was pretty much just winging it, but this was the end result…
Baby peppers (sweet, not spicy), stuffed with hot Italian sausage, and spinach (that had been sauteed in garlic). On top I drizzled evoo, sprinkled some sea salt, popped it in the oven and had a masterpiece when they came out.
