Have somewhere to go and don’t want to walk in empty handed?! We all know that feeling… well, so long as you have about 12 minutes and the following ingredients, listed below, I got your back…
Every week, my neighbor, Melody, hosts a “stitch and bitch” where all of the women in our complex hang out, nosh, knit, and … well, bitch… Just kidding.. no cat fights or talking smack… just conversation among women. Each week most of the women bring along something they’ve baked or cooked and everything thus far has been exquisite… we’re talking pies, fancy cakes, spreads… you name it.. and each week I have walked in empty handed (with the exception of week 1, I brought a bottle of vino). I always want to spare these women my cooking and baking, because I don’t think it even compares to what they bring in (one woman is a professional pastry chef)… and so you can see why I’m like.. OH Madds, just bring the wine. wine is good.
Well, today, I’m feeling a little risky… like I wanna bring something more… something homemade, yet simple so I don’t have enough room to screw it up. The other issue is that i don’t have that many ingredients in my house to get fancy… I figured there has to be something I can bake that will be somewhat enjoyable, require few ingredients, and look beautiful when I walk in with it?!
I did a little search and up came the most simple cookie recipe I have ever seen in my life. Ok, so those ingredients I spoke of earlier? Peanut butter, Sugar, Eggs. Easy!? Right?! This is basically what you do. Combine 1 cup of peanut butter, 1 cup of sugar, and 1 egg! I added chocolate chips, because I love chocolate and want it in my life as much as possible, but you don’t have to if you’re not feeling it… Mix all of those ingredients together and form 1″ balls on a cookie tray… slightly flatten those balls with a fork, and bake on 350 for about 7 minutes. viola! I sprinkled some confectioners sugar on top just to make them look pretty, and Jordan says they taste good! Basically, they taste exactly like peanut butter, but hardened and with sugar. You can’t go wrong there. The 1 cup, 1 cup, 1 egg combo will make you one large trays worth… I doubled up so I could stuff my face with them later. ew, I’m just kidding.
Now I won’t be walking in empty handed. The Entire process, from start to finish took me a total of 20 minutes. not bad, eh? Make some now!!! I can’t stop eating them! not that I ate any of them that I was planning to bring over!?
