I find artichokes to be one of the most amazing foods… ever. They are beautiful, they are an antioxidant “powerhouse”, and they smell and taste absolutely amazing. They have dozens of phytonutrients, which have anti-cancer, anti-aging, heart-healthy, immunity-boosting and cholesterol-lowering attributes- read more here. Sounds good to me!
How to prepare artichokes

Cut about 2″ off of the bottom stem
Cut about 2″ off of the tip.
Sprinkle olive oil over the artichoke
steam artichoke, upside down over a pot of water with oil for about 30 minutes
monitor closely and refill water when necessary

Scallions
Basil
Olive oil
Salt
Pepper
Lime juice
Trader Joe’s sells a really delicious, somewhat spicy, pulled chicken in bbq sauce. Pop that in the microwave for about 3 minutes (in a glass container, ehh hem!) and then top your salad with it.
What a delicious Spring meal!
