sooo simple, sooo tasty. Figure about one potato per person… at least. This is what I do. Scrub, if you feel like it, the outsides of your sweet potato. Meanwhile, preheat your oven to 350. Get back to your potatoes, which you are going to cut long ways in eight pieces. Spray a flat cookie sheet with Pam (note: you can line the cookie sheet with tin foil for easier clean up- but, still spray that with a non stick sorta thing), and lay out your sweet potato slices. Brush on a generous amount of olive oil, sprinkle them with sea salt and pepper, and then pop them in the oven. It usually takes about 30 minutes to get them tender, but crisp on the edges. I usually go a little longer because I like them really crispy. YUM. Finally, eat as many as you can, but don’t be afraid to have leftovers– they taste even better the next day. enjoy!
